Huevos a la mexicana (Mexican Style scramble eggs)



Huevos a la Mexicana is one of the most traditional and common breakfasts all across Mexico.

It is made with some of the most basic and widely available produce of the land: peppers, onions and tomatoes. It’s easy to make, delicious and perfect with some corn tortillas and beans!

Huevos a la Mexicana (Mexican Style scramble eggs)


INGREDIENTS:

5 eggs

1 Tablespoon of vegetable oil

1/2 medium onion, chopped finely

1 jalapeno pepper, chopped finely

1 medium tomato, chopped

1/4 teaspoon de kosher salt

1/4 teaspoon black pepper

INSTRUCTIONS:

1. Beat eggs in a bowl, add salt and pepper, and If you want them to be extra creamy, add a little bit of milk. Set aside.

2. In a medium-sized pan at medium heat, sauté the chopped onion until translucent, then add jalapeños and tomato and continue to sauté.

3. Add eggs, and fold into cooking ingredients with a spatula, and scramble all together.

4. Serve with queso fresco, beans and tortillas.
