Eggs basket (baked eggs)
3 medium potatoes, peeled and shredded (hash brown style)
A pinch of Paprika
A pinch of Basil
A pinch of Salt
A pinch of Pepper
½ Spoon of butter – or Spray butter
Preheat oven at 375°F.
In a medium bowl mix the shredded peeled potatoes, paprika, basil, salt and pepper. Let it sit for about 5 minutes, press the potatoes against the walls of the bowl and drain as much water as you can.
Grease a muffin pan with butter, add the potato mix to the pan, pressing into bottom and up the sides of muffin pan, pushing mixture just above edge, forming potato bowls.
Bake for about 25 minutes (or until it is golden brown).
Once the potato mix golden brown, take the pan out and crack an egg into the potato bowl, sprinkle some salt and pepper and bake for about 10 minutes.
Carefully remove from the pan.
